No-Bake Ice Cream Cake

Every Thursday my husband and I have a date night at home and I usually like to find a new recipe to try for dinner. This week, I came across this recipe on my Pinterest feed. It’s quick, delicious and would be huge success at any summer party. I hope you enjoy.

No-Bake Ice Cream Cake:

12 Ice cream sandwiches ( I used s’mores ice cream sandwiches)

1 cup of whipped cream

For  the whipped cream:

1 cup of heavy whipping cream

2 tbsp sugar

1 tsp vanilla extract

Tip: One cup of whipping cream makes about two cups of whipped cream.

– Beat the mixture in an electric mixer until soft peaks form.

Directions:

  • Unwrapping all the ice cream sandwiches and stacking them layer by layer but each layer if faced an opposite direction as the one before.
  • Spread the fresh whipped cream on the top and sides of the cake.
  • Decorate with your favorite topping option; I made two versions, one with raspberries and mint and another one with salted caramel,  hot fudge and chopped twix bars.
  • Once finished, place it in the freezer for about 20 minutes before you serve.
