Every Thursday my husband and I have a date night at home and I usually like to find a new recipe to try for dinner. This week, I came across this recipe on my Pinterest feed. It’s quick, delicious and would be huge success at any summer party. I hope you enjoy.
No-Bake Ice Cream Cake:
12 Ice cream sandwiches ( I used s’mores ice cream sandwiches)
1 cup of whipped cream
For the whipped cream:
1 cup of heavy whipping cream
2 tbsp sugar
1 tsp vanilla extract
Tip: One cup of whipping cream makes about two cups of whipped cream.
– Beat the mixture in an electric mixer until soft peaks form.
Directions:
- Unwrapping all the ice cream sandwiches and stacking them layer by layer but each layer if faced an opposite direction as the one before.
- Spread the fresh whipped cream on the top and sides of the cake.
- Decorate with your favorite topping option; I made two versions, one with raspberries and mint and another one with salted caramel, hot fudge and chopped twix bars.
- Once finished, place it in the freezer for about 20 minutes before you serve.
Can it stay in the freezer for longer?
Hi Annie! It can stay in the freezer for as long as you want. Sometimes I make them a night before my parties. Have a wonderful day and enjoy this recipe, Camille.
Thanks so much!
