While BBQs are a summer must, there’s something about the hot weather that makes me want to keep things light and healthy, so we find ourselves adding lots of fish and seafood dishes to our weekly menu. It’s an easy marinade recipe that can be used with any fish you like, especially white fish, like mahi-mahi, sea bass and the ever affordable tilapia. Cilantro-Lime Marinade
You’ll need:
- Tilapia fillets
- Chopped cilantro
- Minced garlic
- Freshly squeezed lime juice
- Salt and pepper to taste
Place the fish and ingredients in a big ziploc bag. Let marinate in the fridge for 15-25 min. Heat a grilling pan with a little extra virgin olive oil, and grill for about 3-4 min each side.
I served it over a healthy and delicious garden vegetable quinoa salad.
