It’s summer, it’s HOT, and it’s time for more ice cream. Here’s our latest creation, a take on one of my favorite childhood recipes: Vanilla Strawberry Swirl ice cream.
You can use your favorite vanilla ice cream recipe, we used the basic Cuisinart Simple Vanilla recipe.
Ingredients
- 1 cup whole milk
- ¾ cup granulated sugar
- pinch salt
- 2 cups heavy cream
- 1 tablespoon pure vanilla extract
Sauce Ingredients
- Strawberries: 16 ounce basket of strawberries
- Sugar: 1/2 cup
Instructions
- In a medium bowl, use a hand mixer on low speed or whisk to combine the milk, sugar and salt until the sugar is dissolved.
- Stir in the heavy cream and vanilla.
- Cover and refrigerate 1 to 2 hours, or overnight (optional).
- Sauce
- Hull and blend the strawberries
- Push the strawberry mix through a small sieve to remove the strawberry seeds
- In a small saucepan heat the strawberry mix and the 1/2 cup of sugar on medium until sugar dissolves. Raise to a boil, then reduce to simmer for 5 minutes.
- Let cool, then refrigerate until the ice cream is ready.
- Turn on the ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, about 20 minutes. The ice cream will have a soft, creamy texture.
- Put about half of ice cream in an airtight container, add a layer of strawberry sauce on top. Repeat. With a butter knife, gently swirl the sauce through the ice cream
- Place the covered container in the freezer to harden.
- Enjoy!
