Since it’s summer, we’ve been thinking about new fresh and light recipes, especially desserts. After trying this dessert at Boqueria, a great local tapas restaurant, we’d found our winner. It’s a strange sounding combination, but somehow pineapple, lime zest, and molasses combine to make a healthy, and surprisingly delicious dessert. Just slice a pineapple into quarters, add the zest of a small lime, and drizzle with molasses. Since I’ve got half a ripe pineapple already, I made a delicious fresh pineapple juice. One of our favorite variations is to blend it with mint.

Mango Sorbet
Easy and delicious summer recipe. Mango Sorbet 4 cubed mangos 1 cup simple syrup 2 tablespoons of fresh lime juice Directions: Place cubed mango in a food processor or blender, and puree. Pour in simple syrup and lime juice, and puree until smooth. Pour mixture in an ice cream maker for 25 minutes. Place sorbet in an airtight container and freeze until ready to serve.

Cilantro-Lime Tilapia
While BBQs are a summer must, there’s something about the hot weather that makes me want to keep things light and healthy, so we find ourselves adding lots of fish and seafood dishes to our weekly menu. It’s an easy marinade recipe that can be used with any fish you like, especially white fish, like mahi-mahi, sea bass and the ever affordable tilapia.
