It’s summer, it’s HOT, and it’s time for more ice cream. Here’s our latest creation, a take on one of my favorite childhood recipes: Vanilla Strawberry Swirl ice cream. You can use your favorite vanilla ice cream recipe, we used the basic Cuisinart Simple Vanilla recipe. Ingredients 1 cup whole milk ¾ cup granulated sugar pinch salt 2 cups heavy cream 1 tablespoon pure vanilla extract Sauce Ingredients Strawberries: 16 ounce basket of strawberries Sugar: 1/2 cup Instructions In a medium bowl, use a hand mixer on low speed or whisk to combine the milk, sugar and salt until the sugar is dissolved. Pineapple with Molasses & Lime Zest
Since it’s summer, we’ve been thinking about new fresh and light recipes, especially desserts. After trying this dessert at Boqueria, a great local tapas restaurant, we’d found our winner. It’s a strange sounding combination, but somehow pineapple, lime zest, and molasses combine to make a healthy, and surprisingly delicious dessert. Just slice a pineapple into quarters, add the zest of a small lime, and drizzle with molasses. Since I’ve got half a ripe pineapple already, I made a delicious fresh pineapple juice. One of our favorite variations is to blend it with mint.

Mango Sorbet
Easy and delicious summer recipe. Mango Sorbet 4 cubed mangos 1 cup simple syrup 2 tablespoons of fresh lime juice Directions: Place cubed mango in a food processor or blender, and puree. Pour in simple syrup and lime juice, and puree until smooth. Pour mixture in an ice cream maker for 25 minutes. Place sorbet in an airtight container and freeze until ready to serve.
