We went apple picking last week and brought back a small bag of apples. Then a few days later we hosted lunch for some friends, and our friend Michelle left an even bigger bag of apples she’d picked for us. What to do with all those apples? We tried apple cider, apple butter, and of course, good old apple pie, but our favorite was this Apple Rose Tart. Passion Fruit Mousse
This recipe is so easy and takes just a few minutes to prepare. You can also substitute the passion fruit concentrate with lime juice, and make a delicious key lime pie filling or mousse. This mousse is so delicious we often eat it out of individual dessert glasses. Or we’ll fill mini Graham Cracker pie crusts (which cost less than $2 for a pack of 6) or tart shells and top it off with fresh strawberry, raspberry or blueberries.
